Roast chicken with a thyme & basil infused dressing

This is one of my favourite recipes.Every time Im confused about what to cook for dinner,this is my go to recipe.Its a winner on any occasion/holidays/weekdays or weekends.Its incredibly easy to prepare and is my all time favourite.

Ingredients


Chicken breast with skin-1

Brown rice-25m (soaked)

Butter-1/2 tbsp

Fresh green peas-25 gm (boiled)

Kale/salad leaves- 20 gm

Salt and pepper to taste

Olive oil-2 tbspn

Thyme- 2 sprigs

Basil leaves- a few


Method


1.Cook the brown rice in a rice cooker,add little butter and salt and keep it aside.


2.Marinate the chicken breast with salt ,pepper, thyme and olive oil and set it aside for 15 min.


3.In a mixie, blend some olive oil and basil leaves.Keep aside.


4.Preheat the oven to 180 C.


5.Meanwhile,in a fry pan add little olive oil and fry the chicken on both sides until ¾ cooked.


6.Once done, quickly grease the chicken with butter and transfer it into the preheated oven and roast it for 10-12 minutes or until done.d


7.In a serving plate add the cooked rice and roast chicken. Drizzle little basil infused olive oil on top along with the leftover juices of the roast chicken from the baking tray. Serve warm
