Pumpkin and sage bruschetta

This is a perfect evening snack for any weekday and can also be served as a mouth watering appetiser at your parties. This dish can be prepared in minutes with very little effort,looks extremely appetising and is very healthy. This is a perfect dish for all you lazy people who like a quick and easy way out :)

Ingredients


Pumpkin-300 gm chopped

Olive oil- 2-3 tbsp

Rosemary-1 sprig

Salt and pepper to taste

Sage- a few leaves

Walnuts-3-4

Garlic- 2-3 cloves finely chopped

Healthy loaf of baguette/bread (sliced and toasted)

Parmesan cheese-as per taste


Method


1.In a blender add the garlic, sage, olive oil, walnuts ,salt and pepper and blend it. It should look similar to a pesto sauce and keep aside.


2.In a sauce pan add olive oil,chopped pumpkin,rosemary,salt and pepper.Saute it for a few minutes until cooked and keep aside.


3.Take the sliced and toasted bread and apply the sage and garlic sauce on it.Top it with cooked pumpkin,parmesan cheese and a drizzle of olive oil and serve warm.
