Cauliflower and celery soup

Things I want you to know about this soup.Its really light fast,fresh and simple and is loaded with vitamins and essential nutrients.It’s savory,warm and cozy and refreshing.Its the perfect recipe for a lazy sunny afternoon or an early and light dinner.

Ingredients


Cauliflower -1 small size (boiled)

Celery stem- 1 tbsp small size(finely chopped)

Carrot-1/4 boiled and finely chopped

Onion-1 chopped

Garlic-2 cloves

Olive oil-1 tbspn

Thyme-1 sprig

Salt and pepper to taste.

Vegetable stock-1 cup

Milk-1/4 cup

Cream and pumpkin seeds for garnishing


Method


1.In a sauce pan add olive oil.Fry the onion and garlic followed by cauliflower,celery and carrots. Allow it to cook for a few minutes.

2.Add the vegetable stock, milk ,salt and pepper.Let it simmer for 2-3 minutes.

3.Once done, blend the soup using a hand blender until its smooth.Strain it.Garnish it with cream and pumpkin seeds.Serve warm.
