Avocado on toast with hummus and poached eggs

There is nothing more refreshing that the combination of eggs,avacados and a fresh glass of orange juice early in the morning for breakfast.This is the perfect dish for an early breakfast,an occasion or even Sunday brunch.Its very healthy,nutritious,looks extremely glamorous on the table and is quite easy to prepare as well.

Some of the ingredients used in this recipe





Ingredients


For the hummus


Boiled chick peas-250 gm

Tahini paste-1 tablespoon

Garlic-1 clove

Lemon juice-1/2 lemon

Olive oil- 1 tablespoon

Salt- to taste

Ice cubes-3


Ingredients for the avocado on toast


Avocado- 1 cut into thin slices

Fresh poached egg/fried eggs-2

Sourdough- sliced and toasted-2 slices


Method


1.Prepare the hummus,by adding all the mentioned ingredients into a blender and make it into a thick paste.


2.Toast the sliced bread and apply the hummus/mayonnaise generously on it.


3.Add the sliced avocado on top of the bread and add the freshly prepared poached/fried eggs and garnish with microgreens.Serve warm.



Health/Cooking Tips


1.You can use mayonnaise/avocado cream (1/2 cup yogurt, 1/2 teaspoon lime,salt ,pepper and 1/4 avocado blended in a mixie) instead of hummus as an option.
